Ginger Cookies


When my great-aunt was living, she would host our whole extended family for at least one holiday per year. She was the only sister of my grandfather, who had 4 brothers and she was truly the glue that kept our rather large family close.

Around Christmas, she would make these ginger cookies. I call them cookies because they aren't really crispy but in the recipe she called them ginger snaps. Whatever you call them, they are delish!

Ginger Cookies
2 cups flour
1 tsp ginger
1 tsp cinnamon
2 tsp soda
1/2 tsp salt
3/4 c shortening (1 1/2 sticks margerine)
1 cup sugar
1 egg
1/4 cup molasses
granulated sugar

Soften shortening and cream with 1 cup sugar. Add egg and molasses and mix well.
In another bowl, sift flour, ginger, cinnamon, soda and salt.
Gradually add the flour mixture to the other mixture. Should be stiff. Divide batter and keep 1/2 in the freezer while working with the other 1/2.
Roll into small balls, then roll in granulated sugar and place on cookie sheet.
Bake at 350 for 10 minutes. Cool on baking tray for a few minutes. Enjoy!
